Hops & Malt

Hops and barley malt are two of the base ingredients in beer making. In agriculture, every year is different (soil, moisture, heat, disease pressure). Making craft beer from local organic ingredients results in some of the first farmer identified terroir beers! Imagine a beer vintage, where each year will be slightly distinct from the prior years!

We consider beer to be an agricultural product. As the world begins to move away from the great homogeneity of processed food and drink, keep your taste buds alert for something distinct, nutritious, fresh and flavourful.

Malt

Following in the tradition of restoring landrace wheat, we have embarked on landrace malting barley restoration. We are currently building capacity for traditional floor malting. More to come....

Hops

The hops yard was started in 2012. After a few small harvests, commercial production began in 2016. As with small scale grains, appropriate technology is key when harvesting and drying.

Last year we did several wet hop harvest festivals!

Our varieties include Chinook, Cascade, Centennial, Northern Brewer, Zeus, and Willammette. All with a citrus bent.

Beer

Through our partnership with the regional breweries, we have provided cracked 'Winter Rose' Red Fife wheat and cracked rye for seasonal craft beers. We crack the grain at a 200 year old grist mill, The Old Stone Mill in Delta, ON.

We also provide rhubarb and organic pumpkins for spring and fall seasonal beers!
